Macadamia-Nut-Crusted Mahi Mahi
Ingredients:
- 2 6-ounce mahimahi fillets
- 2 tablespoons crushed macadamia nuts
- 1 tablespoons minced coconut
- 1 egg white
- 1/2 teaspoon crushed garlic
- Pepper to taste
- In a small bowl whisk together the egg white and garlic.
- In a separate bowl combine the nuts, coconut and pepper.
- Dip the fillets in the egg mixture, then in the nut mixture, and coat evenly.
- Place them on a baking sheet.
- Bake at 180 degrees for 12 to 15 minutes or until the fish is flaky and the crust is toasted.
